Jamaican Chocolate Cake Recipe

Jamaican Chocolate CakeIngredients:

1 ½ c Self-rising flour
1 ½ ts Baking powder
1 ts Jamaican Spice Mix
¾ c Margarine, softened
¾ c Superfine sugar
3 Eggs
2 tb Unsweetened cocoa powder
2 tb Hot water
½ c Granulated sugar
⅔ c Water
2 Cinnamon sticks (2″)
¼ c Dark rum
2 tb Slivered almonds
6 oz Semisweet chocolate, broken in pieces
Whipped cream

Preparation:

Preheat oven to 325’F. (165’C.).

Generously grease a 5-cup fluted or plain tube pan and dust lightly with flour. Sift flour, baking powder and Mixed Spice into a bowl.

Add margarine, superfine sugar and eggs.

Blend cocoa powder with hot water and add to flour mixture. Beat well with a wooden spoon 2 minutes or 1 minute if using an electric mixer.

Turn mixture into prepared pan. Bake in preheated oven 1-1/4 hours or until well risen and cake begins to shrink from edges of pan. Carefully turn out cake onto a wire rack and cool.

Combine granulated sugar and 2/3 cup water in a saucepan. Add cinnamon and heat gently, stirring to dissolve sugar. Boil 5 minutes.

Remove from heat, add rum and discard cinnamon. Place cake on a plate. Spoon syrup over cake and let stand 2 hours.

Stud top of cake with almonds. Melt chocolate; carefully spoon over cake, spreading to give a smooth even coating. Let stand several hours. Pipe (with a pastry bag) whipped cream around bottom of cake.

Jamaican Sweet Potato Pudding Recipe

Jamaican Sweet Potato PuddingIngredients:

2 lbs sweet potato, grated
¼ lb. yam grated
1 tsp. baking powder
1 cup flour
½ cup. raisins
½ tin evaporated milk
4 cups coconut milk
1 1/2 cup brown sugar
1 oz. butter
2 tsp. vanilla
½ tsp. nutmeg
½ tsp. salt
¼ cup cherries

Preparation:

Sweet Potato1. Peel and grate the sweet potatoes and yam.
2. Preheat oven to 325° F
3. Mix grated potato, yam, flour, raisins, cherries and baking powder.
4. Mix evaporated milk, coconut milk, vanilla, nutmeg, butter, sugar and salt .
5. Add milk mixture into potato mixture and beat until smooth.
6. Pour into a greased baking pan.
7. Rest mixture about 20 minutes.
8. Bake at 325° F about 1 ½ hours until centre is set.

Dunn’s River Falls Ocho Rios

Dunn’s River Falls in Ocho Rios, Jamaica Dunn’s River Falls Ocho Riosis among one of the most spectacular natural formation in the Caribbean. The Dunns River Falls cascade over smooth lime stone rocks, through the tropical rain forest all the way to the white sandy beach below. You can climb up the water falls which is 183 meters (600 feet) high.

The Spaniards called the area “Las Chorreras”, the waterfalls or springs. The name “Las Chorreras” has degenerated over the years to “Ocho Rios” (meaning eight rivers).

Described as a living and growing phenomenon, it continuously regenerates itself from deposits of travertine rock, the result of precipitation of calcium carbonate with thermal spring activity found in limestone caves.

You can climb the Dunns River Falls in a human chain led by an experience guide, who will also take your camera and pictures as you climb. You will also be accompanied by a videographer who will make a video of your climb, which you can purchase at the end of your climb on a DVD.

Jamaican Ginger Cake Recipe

Jamaican Ginger CakeIngredients:

100g/31/2oz butter, cut into cubes
100g/31/2oz muscovado sugar
3 tbsp golden syrup
150ml/5fl oz milk
1 large egg
150g/5oz plain flour
1 tbsp ground ginger
2 tsp ground cinnamon
1 tsp bicarbonate of soda
2″ piece of ginger – peeled, grated and the juice squeezed from the gratings.

Preparation:

Preheat the oven to 150°C/300°F/Gas Mark 2. Grease a 20cm/8in ring tin or a 900g/2lb loaf tin with butter

Put the butter, sugar and golden syrup into a pan and heat gently, stirring, until melted.

Add the ginger juice to the milk and then add to the pan, pour into a jug and leave to cool for a couple of minutes, then add the egg.

Sift the flour, ginger, cinnamon and bicarbonate of soda into a large bowl. Pour in the wet ingredients and gently mix together.

Pour the cake mixture into the prepared tin and bake for 45 minutes (or up to 1 hour for loaf tin) or until a skewer inserted into the centre of the cake comes out clean.

This is a traditional home cooking dessert is a favourite at lunch time.
